AUS-10 steel: what to know
AUS-10 is the top grade of the Aichi series: about 1% carbon, 14% chromium, molybdenum and vanadium. More carbon than AUS-8 means higher hardness and a finer edge.
- Hardness: 59-61 HRC.
- Sharpness and edge retention: Keeps its sharpness noticeably longer than AUS-8 with a clean, fine cut. A good choice for Japanese sharpness without demanding care.
- Corrosion resistance: High, like most Japanese stainless steels with 14% chromium.
- Sharpening: 15° per side. 1000 and 3000-6000 grit stones, 8000 for a mirror edge.
We will pick stones for this steel or sharpen the knife at the NOJARO sharpening service.
Care
Hand wash and dry immediately, keep out of the sink and dishwasher, cut on wood or plastic boards, store on a magnetic strip or in a block.
