AUS-8 steel: what to know
AUS-8 is a Japanese stainless steel by Aichi Steel with about 0.75% carbon, 14% chromium plus molybdenum and vanadium. Vanadium refines the grain, so the edge is even and takes a keen sharpening.
- Hardness: 58-59 HRC in kitchen knives.
- Sharpness and edge retention: Holds an edge longer than most European knives but less than VG-10 or powder steels. At home it usually needs honing every 2-4 weeks.
- Corrosion resistance: High, handles moisture and acidic food well as long as the knife is not left wet.
- Sharpening: Sharpens fast and is forgiving. 15-18° per side, a 1000 grit stone for sharpening and 3000-6000 for polishing.
We will pick stones for this steel or sharpen the knife at the NOJARO sharpening service.
Care
Hand wash and dry immediately, keep out of the sink and dishwasher, cut on wood or plastic boards, store on a magnetic strip or in a block.
