420J2 steel: what to know
420J2 is a Japanese stainless with 0.26-0.4% carbon and 12-14% chromium, often used in affordable knives and as soft cladding in three-layer blades.
- Hardness: 54-58 HRC.
- Sharpness and edge retention: The edge is softer than AUS-8 or VG-10 and needs more frequent honing, but it does not chip and is easy to restore even with a honing rod.
- Corrosion resistance: Very high, one of the most moisture-resistant kitchen steels.
- Sharpening: 15-20° per side. 1000 grit stone and 3000 for finishing, honing rod between sharpenings.
We will pick stones for this steel or sharpen the knife at the NOJARO sharpening service.
Care
Hand wash and dry immediately, keep out of the sink and dishwasher, cut on wood or plastic boards, store on a magnetic strip or in a block.
