AISI 420 steel: what to know
AISI 420 is a common stainless steel for European professional knives with 0.2-0.5% carbon and 12-14% chromium.
- Hardness: 52-56 HRC.
- Sharpness and edge retention: A soft, tough edge: dulls faster than Japanese steels but never chips and is instantly restored with a honing rod, which is why pro kitchens like it.
- Corrosion resistance: Very high, withstands intensive washing.
- Sharpening: 20° per side, 400-1000 grit stone and regular honing.
We will pick stones for this steel or sharpen the knife at the NOJARO sharpening service.
Care
Hand wash and dry immediately, keep out of the sink and dishwasher, cut on wood or plastic boards, store on a magnetic strip or in a block.
